Packed with vanilla Protein + Collagen, these cookies not only give you that nostalgic taste of cinnamon and sugar but also a protein punch. Perfect for satisfying that sweet craving while keeping things balanced. Soft, chewy, and oh-so-cinnamony. So, next time you're feeling snackish, whip up a batch and treat yo'self—guilt-free!

Ingredients

  • 1 C. Softened butter or coconut oil
  • 1 C. Monk fruit sweetener
  • 2 eggs
  • 1 t. Vanilla extract
  • 1 ½ C. Almond flour
  • 2 T. Coconut flour (optional)
  • 2 Sachet Protein + Collagen (vanilla)
  • 2 t. Cream of tartar
  • 1 t. Baking soda
  • ¼ t. Salt
  • 3 T. Monk fruit sweetener
  • 1 T. Cinnamon

Directions

Step 1

Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper.

Step 2

In a large mixing bowl combine the butter and monk fruit together. Add the eggs and vanilla extract and mix until fully combined.

Step 3

In another bowl combine the almond flour, coconut flour, vanilla Protein + Collagen, cream of tartar, baking soda and salt. Mix until fully combined. Beat into the butter mixture. 

Step 4

Use a teaspoon to form balls of dough. In a small bowl combine the remaining monk fruit and ground cinnamon. Roll each dough ball in the cinnamon mixture. 

Step 5

Place the cookie balls on the prepared baking sheets, making sure to leave 3 inches of space between each cookie. These cookies will expand a lot while baking! Bake for 5-8 minutes in the preheated oven. Allow to cool slightly before transferring from the pans. Enjoy with a cold glass of milk!
