Ingredients

Cookies:

  • 1 Sachet Vanilla Protein + Collagen

  • 1 T. Coconut flour 

  • ½ C. Cooked Mashed Carrots (1 cup uncooked)

  • 2 T. Unsweetened Applesauce

  • ⅔ t. Monkfruit Sweetener 

  • 2 Dashes Ground Cinnamon 

  • Pinch of Sea Salt

  • ¼ t. Baking Powder

  • 1 T. Chopped Walnuts


Frosting:

Best if ingredients are at room temperature.

  • 2 T. Greek Yogurt 

  • 2 T. Vanilla Protein + Collagen

  • 2 T. Cream Cheese 

  • ⅓ t. Monkfruit Sweetener 

Directions

Step 1

Preheat oven to 325F.

Step 2

Except for the walnuts, mix all cookie ingredients until well combined. Once combined, add in the walnuts.

Step 3

Spoon onto parchment-lined cookie sheet. Use the back of your spoon to shape, if necessary.

Step 4

Bake for 8 minutes, and check to see if the cookies are firm. If not, check every 1-2 minutes and remove from oven when firm. Do not overbake!

Step 5

While cookies cool, begin to make the frosting by mixing the Greek yogurt and whey protein.

Step 5

Add in cream cheese and monkfruit. Mix well.

Step 6

Frost cooled cookies, and store in the refrigerator.
