1 ¾ C. Oat flour or Coconut flour
1 ½ - 2 Sachet’s CorVive Vanilla Protein + Collagen
¾ C. Pumpkin puree
1 Egg
½ C. Almond milk unsweetened vanilla
1 t. Vanilla extract
¼ C. Monk fruit
½ t. Salt
½ T. Cinnamon
⅛ t. Nutmeg
2 t. Baking powder
1 t. Pumpkin pie spice
Coating:
¼ C. Monk fruit
2 t. Cinnamon
Preheat oven to 350 F. Line a baking sheet with parchment paper.
Mix all ingredients together in a large bowl.
Use a cookie/melon scoop to make approx. 20 balls and place them ¼ inch apart on the baking sheet.
Bake 10-12 minutes. While baking, make your coating by combining both ingredients in a small bowl.
Allow bites to cool and roll in the mixture. Enjoy!
