Our Protein Pecan Sandies are a delicious and nutritious twist on the classic cookie. Made with CorVive’s Vanilla Protein + Collagen, these sandies deliver a satisfying crunch with the rich, buttery flavor of pecans—all while packing in high-quality protein to fuel your body. With clean ingredients and no unnecessary fillers, this recipe is perfect for a healthy snack or post-workout treat. Enjoy the taste of a traditional pecan sandie while knowing you’re nourishing your body with every bite!
1/2 C. Raw pecans
2 T. Shredded unsweetened coconut - (Pulse those in a food processor to smaller bits) Then add:
1 Sachet Vanilla Protein + Collagen
1/2 C. Coconut flour
1/4 C Coconut butter melted
3 T. Powdered monk fruit sweetener
1 t. Vanilla extract
Pinch of salt
Pulse again to combine, then add 5-6 T. unsweetened vanilla coconut milk from a carton (or almond milk) and pulse again. Add the amount of milk needed so that when you form balls they easily hold together. Not too crumbly or too wet.
Optional to roll them in a mixture of shredded coconut and powdered monk fruit.
