This Overnight Apple Pie Protein Chia Pudding is like waking up to your favorite dessert. Prep it the night before and by morning, you'll have a delicious, nutritious pudding ready to eat. Top with fresh apples and nuts to give it that added crunch and sprinkle some cinnamon for that heartwarming taste. It's like having a slice of apple pie, minus the guilt!

Ingredients

  • 3 T. Chia seeds black
  • 2 T. Protein + Collagen vanilla 
  • 1 T. Maple syrup or honey
  • 1 t. Vanilla extract
  • ¾ C. Coconut or almond milk
  • ½ C. of applesauce
  • ¼  apple cubed for topping
  • 1 t. cinnamon powder plus more to sprinkle on top
  • 2 T. chopped roasted nuts for garnishing

Directions

Step 1

Mix all the ingredients, except for the apples, in a small bowl or cup.

Step 2

Cover the bowl with plastic food wrap and store in the fridge to thicken, for 1 hour.

Step 3

Once it has thickened, stir together again, and add a little bit more milk if needed.

Step 4

Store chia pudding refrigerated overnight or at least 4 more hours covered with plastic wrap.

Step 5

When ready to serve, garnish with cubed apple, cinnamon and nuts.
