Ingredients

  • 2 Medium avocados (3/4 cup mashed)
  • 3 Pasture-raised eggs
  •  1/4 C. Pure maple syrup
  • 3 T. Virgin coconut oil (melted)
  • 2 Sachets Protein + Collagen (Chocolate)
  • 1 3/4 C. Almond flour
  • 1/2 C. Cacao powder
  • 1/4 C. Arrowroot starch
  •  1 T. Baking powder
  •  1/4 t. Salt
  • 1/3 C. Extra-dark chocolate chips

Directions

Step 1

Preheat your oven to 350 F and line a 12 tin muffin tray with 10 baking liners.

Step 2

To a high speed blender or food processor, add the avocado, eggs, maple syrup, and coconut oil. Process until smooth and then transfer to a large bowl. 

Step 3

Add the remaining ingredients and mix to combine. 

Step 4

Transfer the batter into muffin liners and place in the oven.

Step 5

Bake for 20-25 minutes or until just cooked through. Let cool for 15-20 minutes before removing. 

Step 6

Enjoy as a dessert or post workout protein snack for the week!
