4 Room temp eggs
1.5 C. Sugar free chocolate chips
1 T. Coconut oil
1 Zucchini, grated finely
1 Sachet Protein + Collagen (Chocolate)
Add eggs to a stand mixer and beat until fluffy.
Melt the chocolate with oil.
Squeeze a little moisture from the zucchini (not all- just a little).
- Add the chocolate and zucchini to the egg mixture and continue beating on low.
- Add the protein powder. And stir until combined.
Pour into a greased 8-or 9-inch square pan and bake at 350 degrees for 13-15 minutes.
We use dark chocolate- so if you want them sweeter- add a couple TBS of confectioners monk fruit sweetener or sweetener of choice.
Add an optional frosting/ if desired. I just mixed up a little PB, PB2, confectioners monk fruit sweetener and just enough almond milk to create the frosting texture. Spread on top once cooled.
